Welcome to TU Dublin's Botanical Cuisine Digest
The BA (Hons) in Botanical Cuisine is a new unique honours culinary arts based programme offered by TU Dublin – Tallaght and is the first degree of its kind in Europe. This 'Farm to Plate' culinary degree programme is aimed at producing contemporary chefs to meet the rapidly changing trends in food and to creatively and confidently innovate plant-based food production and service. It is delivered in partnership with Airfield Estate, Dundrum. Chefs JP Mc Mahon( Aniar), Sasu Laukkonen (Ora, Finland) and Matt Orlando (Amass) are patrons of the programme.
This digest brings you on an experiential journey with students and graduates of the programme as they share their insights on learning and its application in their professional practice.
